Blueberry Peach Crisp

Alright, by now I'm sure you guys have had about enough of me waxing poetic about summer produce, but guys! It's just so good!!!! When I'm not eating fruit straight out of my hand, one of my favorite things to do is to bake up a fruit crisp. They're quick to put together, make the house smell amazing, and are also just ultra tasty.

Since I had quite a lot of blueberries on hand from my blueberry picking trip with my mama, I decided to make a blueberry crisp! I also had a few peaches on hand that needed to be eaten, so I threw those in too.

The result is a sweet, tart, and gooey fruit filling, with a deliciously crisp and buttery topping. Yum!
Blueberry Peach Crisp:

Ingredients:

For Filling:
- 3 ripe peaches, pitted and roughly chopped
- 5 cups blueberries
- 1/2 cup brown sugar
- 2 tbsp cornstarch
- Juice of one lemon
- Pinch of salt

For Topping:
- 3/4 cup flour (I used Manini's gluten free)
- 3/4 cup rolled oats (I used Bob's Red Mill gluten free oats)
- 3/4 cup brown sugar
- 1 tsp cinnamon
- Pinch of salt
- 1/2 cup (one stick) butter, melted (you could use vegan butter instead to make the recipe vegan)

1. Preheat your oven to 375°F and grab a 9"x13" pan. If you don't have that size, close enough will do!
2. In a large mixing bowl, combine all the ingredients for the filling.
3. Use a slotted spoon (or your hands, which is what I would have done if I weren't taking pictures!) to gently mix the ingredients until well combined.
4. Pour the filling into your pan, and spread it out evenly.
5. In another large mixing bowl (or the same one!), combine all the topping ingredients except for the butter, and stir to combine.
6. Pour the butter over the top of the topping mixture and mix it with a fork until it forms nice crumbles!
7. Crumble the topping over the filling, being sure to distribute it evenly, and then put your crisp in the oven!
8. Bake for 45 minutes, or until the fruit is bubbling and the topping is golden and, well, crisp.
Once it's cooled enough to not burn your mouth, serve it up, either on its own, or with vanilla ice cream!

  15. Hmm. Yeah, I need this. Or um... the baby needs it? Haha! That's my best line now.
    I haven't had fruit crisp in way too long, and we just picked some blueberries (not enough to make jam, because I am SO not a patient blueberry picker! Haha! Like five minutes into picking, I was all "I'm tired. I'm hot. This takes too long. Can we go eat now? I have to pee!" like a five year old. My husband just shook his head at me.) that I want to use for something!

    By the way, do you use any gluten free cookbooks or websites for recipes? My mom is allergic to gluten, and has been looking for some good sources. And since you seem to post lots of gluten-free recipes, I thought I'd ask!

    1. Hahaha, the baby totally needs it! I'm totally hooked on berry picking. I want to do more!

      Ya know, unfortunately, I don't really have any favorite gluten free specific ources for recipes. I've been eating gluten free for about four and a half years, and over time, I've gotten away from specific gluten free recipes, and have just started to adapt recipes and make substitutions, use recipes that are naturally gluten free (which there are a ton of), or make stuff up.

      I picked up a copy of Artisanal Gluten-Free Cooking a few months ago, and it looks great, but I haven't tried much out yet. I also really love Indian and Mexican food, both of which are largely gluten free to begin with, so those can be good sorts of cookbooks to pick up!

      How long has your mom been gluten free?
